1. Interaction and experience are key
In 2025, catering at your wedding is more than ever about an exceptional experience. Couples are increasingly opting for interactive concepts where food and drinks are an important part of the party. The trends of walking dinners, showcooking, barbecues and food trucks have already gained popularity for several years and will continue next year. There is even a step further with the ‘Build your own plate’ trend, where guests put together their own dishes and drinks. Think sharing dishes, a buffet, a cocktail bar where guests can create their own signature cocktail, different food stalls, and so on.
Sharing dishes are also totally ín, according to KTCHN. Alexia Turlot of KTCHN says: ‘Today's chefs are reinventing the culinary experience around sharing dishes, with dishes that unite, surprise and delight. Sharing food in the middle of the table, turns meals into a moment of authentic interaction. We design sharing dishes to create a warm atmosphere where people enjoy and socialise together.’

2. Personalised menus
Following on from this, to give their guests an éxtra special experience, couples will opt for exceptional, customised menus in 2025. Niki Claes, CEO of Very Food Catering, shares: "Couples increasingly expect customised menus - which we have been doing for many years; for us, every couple is unique. These menus reflect the personal tastes and background of the couple - from customised reception appetisers to foodcorners or a seated dinner with a twist."
In doing so, bridal couples increasingly want to be actively involved in the creation of their menu, choosing their favourite dishes or special creations that celebrate their cultural roots. This way, the meal becomes not only a culinary experience, but also a story told by the couple. Many caterers are happy to listen to your wishes for this, including Traiteur Leconte. Carine Leconte shares, ‘You can't think of something so captivating, or we will organise it tailor-made for you.’
3. Sustainable catering
Sustainability will continue to be one of the biggest wedding trends to influence the catering industry in 2025. Zero waste catering is gradually becoming the norm. Coeur Catering is a good example of a caterer who is fully committed to sustainability. They work with local and biological products and have strong ties with local suppliers to reduce their CO2 emissions.
You can additionally reduce your ecological footprint by choosing a caterer who donates surpluses. In the meantime, work closely with your caterer to determine the right quantities. For example, Great Traiteur works with predetermined formulas to avoid waste. Gilles Molitor, co-founder of Great Traiteur, shares: "There is clearly a growing concern for the environment. You can see this in our choices to source locally, to reduce and recycle food waste, and to be responsible in all our operations.’
Very Food Catering is also committed to the environment. Niki says: "The emphasis on sustainable catering is and will continue to be important, with a greater focus on locally produced and organic ingredients. We very consciously choose seasonal ingredients and if it answers the client's demand, we work with only local products. We try to avoid food waste this way. In addition, we also see an increased focus on vegetarian and vegan food to reduce the impact on the environment."
4. Vegetables are the stars of the plate
So even in 2025, you will increasingly see vegetarian and vegan dishes on the menu. Gilles from Great Traiteur explains: ‘There is a significant increase in ’flexitarianism', where people do not eat meat or fish one or more days a week. Our customers want to reduce their consumption of animal proteins. We therefore offer alternative solutions while ensuring that everyone is still satiated.’
Alexia from KTCHN adds: "At a time when more and more people want to reduce their meat consumption, vegetables are emerging as a natural and creative choice. Chefs are competing with each other in their ingenuity to transform vegetables into rich, colourful and flavourful dishes. Vegetables are no longer just ‘side dishes’. On the contrary, they are becoming the stars of the plate, carefully crafted to reveal varied textures and subtle aromas. This evolution responds to the demand for vegetarian and vegan menus while demonstrating that plant-based cuisine can be both delicious and surprising."
Coeur Catering is another fine example of a caterer that places a strong bet on vegetables. As much as 40 per cent of their offering, for instance, is resolutely vegetarian, with plenty of options for vegan dishes on top of that.
5. Local ingredients, worldly flavours
The fact that chefs are increasingly opting for local and seasonal ingredients is not only for sustainable reasons. These ingredients are also in huge demand because of their delicious and authentic high-quality flavours. Alexia from KTCHN explains, ‘Local products, used at their ripest point, provide incomparable flavour and unlimited creativity. Every season inspires new recipes and new flavour combinations.’
At Very Food Catering, they see that while worldly flavours remain very popular, they are also increasingly being combined with local Belgian ingredients. Niki: ‘Think Japanese street food with Flemish ingredients, or fusion dishes where international and local elements come together, such as Flemish ’patatas bravas' with smoked paprika mayonnaise. This unique experience invites guests to discover new flavours.’

6. Alcohol-free drinks
In 2025, mocktails and other non-alcoholic drinks are gaining strong popularity. Whereas mocktails are already a trendy substitute for fruit juice at receptions, you will now see them appearing more often on the dance floor, alongside non-alcoholic beers and non-alcoholic cava, gin or wine.
With a mix of fruits, herbs and spices, caterers can get endlessly creative with mocktails. Similarly, caterer Woodness offers tasty mocktails and a deliciously refreshing juice bar.
7. Mini- and bite-sized dishes
Mini- and bite-sized dishes are on the rise. These small dishes are super flexible: you can serve them during the reception, as part of your walking dinner, buffet-style, or even as a late-night snack on the dance floor. With this, your caterer presents all kinds of flavours and styles in lots of small portions. Moreover, with the small dishes, you can effortlessly accommodate various dietary requirements and allergies. For those with a sweet tooth, donuts, churros, a chocolate or candy bar are then in high demand. ‘After a fine day full of love and friendship, there is nothing more heartwarming than enjoying a late-night snack together ’, concludes Xavier Fruy of Fruy Catering.
