Sustainable catering, what's in a name?
‘Sustainable catering is all about the three pillars of sustainability: people, profit and planet,’ Sebastiaan explains. One of the keys to responsible catering is the use of local and seasonal ingredients. ‘We call on our network of local suppliers such as organic bakery De Compaan, Hoeveslagerij De Vierklaver and Duroc d'Olives from Lochristi’, Sebastiaan says.
‘Moreover, our sustainable story extends beyond our kitchen,’ adds Sebastiaan. "We swap sugary soft drinks for home-made lemonades to keep transport to a minimum. We choose Rainforest Alliance-labelled coffee roasted by De Draak in Ghent, and all our tea is organic. We also offer only (sparkling) wines of European origin, and where possible from Belgian soil."
Connecting stories
Sebastiaan: ‘Because of the conscious choices we make, each of our dishes comes with an inspiring local story. For example, we like to tell you about life on Belgian vineyards and the workings of organic farmers. You get a picture of who you are actively helping. That makes sustainable catering at your wedding just that little bit more beautiful and delicious."
