Alexia explains more about the vision of Choux de Bruxelles: "Our culinary philosophy is based on three pillars: elegance, creativity, and authenticity. We always work with seasonal products and add a modern touch. The goal is to create a culinary experience that reflects the couple, evokes emotions, and creates lasting memories for all guests. A wedding is not just an ordinary meal; it is your love story that we translate onto the plate."

Transforming personal stories into dishes
The path to a customized menu always starts with listening carefully to the bride and groom. Alexia: “Our event manager captures the couple's wishes and stories and translates them to our chef. This could be about a trip, a dish they like to eat together, or a family recipe that connects them to their roots. We are inspired by these stories to create a menu that really suits them.”

Culinary fusion
Sometimes this approach leads to unique creations, Alexia shares: "We recently catered a wedding at the Castle of Drogenbos, where one of the partners had Greek roots and the other Japanese. The couple really wanted to share their heritage with their guests through what was served that day. So we put together a menu that featured both cuisines, right down to the decoration and presentation of the dishes. Everyone thoroughly enjoyed it!"

Inclusive and customized menus
Customized catering also means taking specific diets and expectations into account. Alexia: "Every guest should feel welcome and well cared for. That's why we ask bridal couples to inform us in advance about any allergies or special diets. The menu can be easily adapted, whether for vegetarians, vegans, or cultural requirements such as halal or kosher. At buffets, we provide clear indications of allergens. It is important that every dish remains inclusive, tasty, and aesthetically pleasing, without compromising on enjoyment or conviviality."
