“Customization is always key at Woodness,” Guillermo begins. “To create a wedding menu tailored to the couple, we invite them over. With a drink in hand, we sit together to get to know them better. We're genuinely interested in who they are and how they met. We ask them about beautiful memories like trips they've taken together and unforgettable moments from their early dating phase. If the couple wants, we even delve into their home interior—nothing is too crazy,” Guillermo laughs.
"By asking the couple various questions, we learn a lot about them. The small, sometimes very trivial facts they share are the perfect starting point for us to craft a fantastic menu, completely tailored to the couple.”
Finding Your Emotional Connection
Guillermo's secret to successful wedding catering? "Every wedding is filled with emotions: happiness, love, hope, and many more. I always strive to tap into the emotions of the couple and guests during the dinner. How? This is where the stories the couple shared in our first meeting come into play.”
“We catered for a couple who went on a fantastic world trip together,” Guillermo continues. “Every dish of the evening highlighted a country they visited, starting with a Mexican tostada as a nod to where the couple first met. For another couple, we got creative with the bride's favorite flower, which held special significance for her. I assure you, at both weddings, there were tears of joy when we presented the dishes at the table. These pure emotions are the best compliment a chef can receive at a wedding.”
Choose Sustainability!
In addition to customization and emotion, sustainability is a must at your wedding according to Guillermo: “At Woodness, we strive for a zero waste principle. When ingredients are left over from wedding catering, we use them in the meals we serve at our Woodness food bar in Ypres.”
“We also give our coffee grounds to a local mushroom farmer and use an electric van to deliver sandwiches. Furthermore, our uniforms are made from recycled Tencel, and for every apron we make, we plant a tree. In this way, we contribute and indirectly the couple does too,” Guillermo concludes with a smile.
