1. Sustainable ingredients
It is striking that the demand for sustainability is becoming increasingly important. Bart Claessens from Silverspoon explains: “We see that people attach great importance to sustainability. They appreciate it when fair products are used.” Vicky from Nori Catering confirms this trend. “People are increasingly interested in plant-based and high-quality meat or fish. There is also demand for organic and seasonal products.” Kristof Boxy also tells us that Boxy works exclusively with sustainable products.

2. Top products for smaller groups
The quality of the ingredients is also becoming increasingly important. “There is a real trend towards top-quality products. For example, lobster or langoustines are becoming increasingly popular,” says Kristof.
Especially for couples who opt for a slightly smaller and more intimate celebration—who believe that less is more—quality is paramount in everything they offer their guests during their wedding reception. Bart explains: "Nowadays, people are really conscious about who they invite to their party. There are certainly still large weddings, but we have noticed that more and more wedding parties are being organized in more intimate circles, with around 50-100 guests."
3. Vegetarian & vegan
Whether for health reasons or increased environmental awareness, more and more people are considering a vegetarian or vegan lifestyle. Stijn De Knijf of Choux de Bruxelles says: “More and more people are opting for a vegetarian or vegan menu; we are now receiving very specific requests.” Bart from Silverspoon adds: “Vegetarian and vegan ‘options’ are increasingly appearing on menus as possible alternatives to the standard menu. The majority still opt for the basic menu, but more and more guests are choosing the fully vegetarian or vegan option.” Kristof Boxy confirms and adds: "In fact, we ourselves have now almost completely switched to a vegetarian diet. We therefore love to incorporate a wide variety of vegetables into our menus."
4. Sharing plates
- Food sharing, a trend that has spread from trendy restaurants, is becoming increasingly popular. “The food sharing trend emerged in the wedding sector a few years ago and has remained very popular ever since.” Bart tells us. Kristof: "Sharing dinners are a very cozy, intimate trend that is sure to continue at wedding parties for a long time to come. We're fans!" Vicky also confirms that dinners with sharing plates are a popular choice at weddings; it's a formula that encourages the whole table to interact with each other because you're not just serving yourself but also each other, asking your neighbor to pass a certain dish, etc.

Outdoor weddings are also very popular at the moment, and this calls for a suitable catering formula. Vicky explains: “At these outdoor parties, which usually take place in the summer, we often provide delicious, original ‘outdoor cooking’. Outdoor cooking always creates a spectacle and adds a lot to the atmosphere and conviviality.”

A bohemian or ‘boho’ wedding is incredibly popular these days. With a bohemian wedding, you are opting for a slightly more casual and playful style. Bart explains: “When couples choose a bohemian celebration, it's nice to adapt the styling of the party tables and provide a customized catering approach. Street food is often a suitable choice.” Vicky confirms: “Our bohemian street food formula is very popular. We vary with a number of themes, and the food is available in differently decorated food stands.”

Good news for the growing number of people who suffer from certain food intolerances or allergies: today's catering sector is perfectly capable of providing customized menus. Important: it is best to indicate your sensitivities immediately when you RSVP, so that professional caterers know who they need to take into account. “We always have a lot of respect for guests with allergies or intolerances. We are very careful about what we offer them and take these personal requests into account when putting together the menu,” says Kristof. Tip: guests who are pregnant should also inform the caterer so that they can provide suitable ingredients or cooking methods.
